I have a pork sirloin roast that has been marinating in herbs and garlic oil since Friday evening.

Probably some mashed potatoes to go along. Maybe a simply prepared veggie...have a few to choose from...maybe steamed squash.

I'll put in in around 4:30 with a planned meal time around 6.

Just finished some strip steaks on the grill, with steamed cauliflower, salad, green beans, scalloped potatoes. And homemade chocolate cake and ice cream for desert.

Scallop and crab stuffed filet minon are in the oven baking. Gonna have it served over a bed of long grain wild rice and fresh baby brussel sprouts in a garlic butter sauce.

Gonna be really good. Can't wait.

Been sick all weekend, the wife and kid were out, so I just got to cook for myself.

Made a panini.

Seasoned chili-lime chicken breast, sliced up, tossed in some smoky chipotle sauce, pepper jack, and bacon.

Tasty.

Girlfriend has been running a 102 fever, so I've been playing nurse Toad. She needed to do some sweating, so I spent about 30 minutes making a true dark roux, then slow-cooked the trinity, crap, shrimp, lobster, okara, smoked chicken and andouille sausage into a gumbo in the slow-cooker for about 5 hours. Glad I can get gumbo File here in Texas.

Here we did typical tailgate fare.......

Brats, Polish sausages, potato salad and some cole slaw. Talking about doing slow cooked BBQ ribs next week-end for the games.

Just got a new crock pot. Slow cooked a pork shoulder roast all day with some salsa and veggies. Made pulled barbeque pork sandwiches from the roast and a soup from the juices, salsa and veggies. Also homemade cole slaw. I love my new crock pot!

I love my Crock Pots.

To me there is no better way to make pulled pork. I also love making sloppy joe and then simmering it overnight in the crock. It cooks all of the flavors all the way through the meat. Yum.

we're slow cooking a pork shoulder today for pulled pork, too. Just the shoulder and about 24 oz of root beer in the pot on the 10 hr setting.

I live in the South....pork over wood coals and smoke for me.


Don't get me wrong....I've done the crockpot deal myself many times....it is a nice quick fix, and the rootbeer is a nice tip....done it myself.

Well, you want to see how it feels before going any further.

I've been in a very Italian mood recently. Maybe it's the winter months (meat sauces, pasta, bread, EVOO, cheeses, etc).

I just made my Sunday Gravy a week back:

2 lbs of boneless skinless chicken thighs
1.5 lbs. of chicken sausage (2 kinds - Italian and Red Pepper 'n Garlic)
2 lbs. of beef/pork meatballs with mozzarella balls on the inside
2 cans of San Marzano tomatoes
1 half bottle of red wine (cab works well)
Lots of fresh basil
1 small mashed white onion with 4-5 cloves of garlic
Big Dutch Oven
On low heat for 5 hours



Serve with pasta, garlic bread and a BIG glass of wine.

Now that's comfort food.
